Snickerdoodle Protein Bars Recipe
Ingredients:
1 cup coconut oil
1 cup maple syrup (or honey)
1 large egg, plus 1 egg yolk (room temperature)
1 teaspoon vanilla
2 1/4 cups all-purpose flour (or gluten-free flour)
1/2 cup cashew butter
1 teaspoon baking powder
1 teaspoon cream of tartar
1 teaspoon ground cinnamon
Directions:
In a bowl, combine the coconut oil, maple syrup, cashew butter, egg, and egg yolk. Blend until smooth.
Add the protein powder and blend again.
Whisk in the gluten-free flour, baking powder, ground cinnamon, and cream of tartar until thoroughly combined.
Line a baking pan with parchment paper, pour the mixture into your prepared pan, and spread evenly.
Bake at 375°F for 12 minutes.
Let them cool before cutting into bars, and enjoy!
